Exciting news people!
We are hosting our very first event on 9th March 2019 as part of the Melbourne Food and Wine Festival! It’s called “Even Artichokes Have Hearts: a plant-based, zero waste degustation”.
And you guessed it - the menu will be entirely made up of plants, used in as many creative and interesting ways as we can think of to minimise waste. We’re also sourcing some delicious vegan wines, spirits and liqueurs so you have the option of matching with your meal.
As you probably we know, minimising waste and using veggies to their full advantage is kind of our thing… But this is an opportunity for the team to get really creative and push our ethos even further than what they can manage during everyday service.
There’ll be some fermenting, some pickling, air drying, slow-cooking, sous-vide-ing, roasting, confit-ing… Whatever it takes to make those scraps taste damn delicious.
